Let's Make A Meal

"Today, we're making cauliflower and broccoli mash," grins Kimberly McCullough (Robin, GENERAL HOSPITAL). The actress admits she is far from an accomplished chef, and her busy schedule doesn't allow her to prepare time-consuming, extravagant meals. Plus, healthy choices are a must. "I shop at Trader Joe's all the time, because they have good stuff that's also easy to make," she notes. "The way that I live, I'm never home, so I have to find different ways to make healthy dishes quickly."

As for the selection du jour, "I've just discovered this, and it's a perfect side dish," smiles McCullough. "I like to make a lot of fish and this is easy, but it's really healthy. I can't say that enough. I'm not much for pastas and stuff, so after work, I like a piece of fish with some sort of side dish. BUt I don't like just plain, sauteed vegetables. They're not enough for me, so this dish is really nice." And she's quick to point out that healthy doesn't have to mean taste-free. "Another good thing is that this has a lot of cheese in it, which I like," McCullough smiles, "so it tastes really good. It's not bland, it has flavor. But it's healthier, I think, than a side of mashed potatoes."

 

Cauliflower and Broccoli Mash

Ingredients:

1 bag of frozen cauliflower
1 bag of frozen broccoli
2 frozen garlic cubes
1/2 cup of chopped white onions
1 small container of Gorgonzola cheese (4-5oz.)
1/2 small container of Parmesan cheese (4-5oz.)
pinch of salt and pepper

Directions: McCullough says, "At Trader Joe's, they have great cubes of frozen garlic, so instead of having to get fresh stuff and chop it, just put that in the pan and saute it with some onions. It's super easy. Take the brocooli and the cauliflower, put it in a plastic bag, and put it in the microwave for about 30 seconds to a minute. Make sure the broccoli and the cauliflower get really soft. Then place in a mixing bowl and mash it up with the sauteed garlic and onions. Then add an entire container of Gorgonzola cheest and continue mixing it up. Salt and pepper to taste, and garnish it with fresh Parmesan cheese - the stringy kind, not the powdery kind. The entire process will take 10 minutes, maximum. Then enjoy with your favorite entree." Makes 1-2 servings.
